• Purchase high grade raw fish, shellfish and ensure freshness, quality and proper storage of raw fish for sushi and sashimi by timely handling, filleting and refrigeration of fish
• Create and plan fusion style sushi and Japanese food menu including rice for sushi and variety of maki (rice rolls) and miso and u-don soup
• Prepare and cook sushi and sashimi upon group or individual order
• Train and supervise sushi bar and kitchen staff how to make traditional and fusion sushi and maki (rice roll), fusion Japanese food and preparation
• Requisite food and kitchen supplies, if required
• Maintain work area clean
