• Plan menus, determine size of food portions, estimate food requirements
• Instruct cooks in preparation, cooking, garnishing and presentation of food
• Create new recipes
• Demonstrate new cooking techniques and new equipment to cooking staff
• Supervise cooks and other kitchen staff
• Supervise on preparing and cooking complete meals or individual dishes and foods
• Supervise on preparing and cooking Japanese style dishes such as Katsu, U-don, Donburi, Karaage
• Supervise on preparing specialized homemade sauces for various type of Katsu
• Supervise on Trimming and aging Pork Loin, Pork Tender, Chicken, Beef, Fish for different Katsu
• Supervise on Baking and Preparing breadcrumb for Katsu
• Supervise on preparing specialized homemade Tsuyu (broth) for U-don
• Recruit and hire staff
• Train staff in preparation, cooking and handling of food
• Prepare dishes for customers with food allergies or intolerances
• Maintain inventory and records of food, supplies and equipment
• Maintain proper sanitation for kitchen area and utensils.
