• Plan and direct food preparation and cooking for quality sashimi, sushi, and rolls and other various different types of dishes using different parts of the fish
• Prepare and serve freshest Korean style sliced raw fish (hwareo hoe)
• Prepare dishes for customers with food allergies such as shellfish allergy
• Properly and timely clean, fillet, store fresh fish and shellfish at the required temperature
• Plan and create new and trendy sushi, rice rolls and hand rolls and new trendy appealing display
• Oversee and final review the menu and display before serve to customers
• Maintain inventory and order raw materials and ingredients.
• Train and supervise kitchen staff members
