This job is best suited to the seasoned cook or Chef who has lived and worked in these areas of Mexico. Part of the Job duties includes:
• Preparing Regional Mexican soups, sauces, meat and poultry from the different Mexican regions.
• Showing knowledge of the traditional Mexican techniques from the different regions.
• Proficient knowledge of the different Mexican Regions and their staples, at the very least, Yucatan, Puebla, Baja California and Oaxacan cookery.
• Showing creativity, flare in the traditional Mexican way, incorporating traditional steps and recipes into their finish dishes.
